Teacher's Black Bean Soup (Teacher)

  • Ingredients

    • oil, olive, 1 tablespoon
    • onion(s), 1 finely chopped cup(s)
    • beans, black, 4 cooked cup(s)
    • carrot(s), 1 grated
    • water, 2 cup(s)
    • lime juice, 2 fresh tablespoon
    • salt, sea, 1 teaspoon
    • cheese, Monterey Jack, 1 shredded cup(s)
    • yogurt, plain, 1/2 cup(s)
    • cilantro, 1/4 chopped cup(s)


    Directions


    1. Heat the oil in a medium saucepan over medium heat. Add the onions and saute 5 to 8 minutes or until tender.
    2. Stir in the black beans, carrot, water, lime juice, and salt. Simmer for 10 minutes.
    3. Spoon soup into soup bowls and top with cheese, yogurt, and cilantro before serving.
