Teacher's Black Bean Soup (Teacher)

Ingredients
- oil, olive, 1 tablespoon
- onion(s), 1 finely chopped cup(s)
- beans, black, 4 cooked cup(s)
- carrot(s), 1 grated
- water, 2 cup(s)
- lime juice, 2 fresh tablespoon
- salt, sea, 1 teaspoon
- cheese, Monterey Jack, 1 shredded cup(s)
- yogurt, plain, 1/2 cup(s)
- cilantro, 1/4 chopped cup(s)
Directions
- Heat the oil in a medium saucepan over medium heat. Add the onions and saute 5 to 8 minutes or until tender.
- Stir in the black beans, carrot, water, lime juice, and salt. Simmer for 10 minutes.
- Spoon soup into soup bowls and top with cheese, yogurt, and cilantro before serving.
