Sweet Pepper Omelet

Ingredients
- Oil, olive, 2 teaspoon
- Pepper(s), red, bell, 1/2 chopped cup(s)
- Egg(s), 2 lightly beaten
Directions
- Heat a small skillet over medium heat. Add the oil and swirl to coat the skillet. Add the peppers and cook 5 minutes or until tender.
- Add the eggs, cover, and cook 1 to 2 minutes or until the egg is set. Fold the omelet out onto a plate and serve.
