Cheddar-Broccoli Soup (Nomad)

Ingredients
- oil, olive, 1 tablespoon
- onion(s), 1 chopped cup(s)
- garlic, 1 minced clove(s)
- broccoli florets, 4 cup(s)
- broth, vegetable, 2 organic cup(s)
- cheese, cheddar, shredded, 1 cup(s)
Directions
- In a large saucepan, heat the oil over medium heat. Add the onion and saute 5 minutes or until tender. Add the garlic and saute 1 minute longer.
- Add the broccoli and vegetable broth. Simmer, partially covered, for 15 minutes or until broccoli is tender.
- Transfer the mixture to a blender or food processor, in batches if necessary, and whirl until almost smooth. Return the broccoli mixture to the saucepan. If soup is too thick, thin with a little water.
- Over low heat, stir in the cheese until melted.
