Egg Salad Sandwich (Warrior)

Ingredients
- egg(s), 2
- yogurt, low-fat plain, 2 tablespoon
- oil, olive, 2 teaspoon
- salt, sea, 1/8 fine teaspoon
- celery, 2 finely chopped tablespoon
- bread, sprouted wheat, 2 slice(s)
- lettuce, romaine, 2 piece(s)
Directions
- Place eggs in a saucepan. Fill with water until the eggs are completely submerged. Heat over medium flame until water boils. Lower to low flame and simmer about 15 minutes.
- Remove the eggs from pan and run under cold water to cool.
- Peel and chop the eggs.
- In a small bowl, combine the yogurt, oil, and salt. Stir in the eggs and celery until well mixed.
- Toast the bread, if desired. Sandwich the egg salad between the two slices of bread along with the lettuce, and serve.
