Egg Salad Sandwich (Warrior)

  • Ingredients

    • egg(s), 2
    • yogurt, low-fat plain, 2 tablespoon
    • oil, olive, 2 teaspoon
    • salt, sea, 1/8 fine teaspoon
    • celery, 2 finely chopped tablespoon
    • bread, sprouted wheat, 2 slice(s)
    • lettuce, romaine, 2 piece(s)


    Directions


    1. Place eggs in a saucepan. Fill with water until the eggs are completely submerged. Heat over medium flame until water boils. Lower to low flame and simmer about 15 minutes.
    2. Remove the eggs from pan and run under cold water to cool.
    3. Peel and chop the eggs.
    4. In a small bowl, combine the yogurt, oil, and salt. Stir in the eggs and celery until well mixed.
    5. Toast the bread, if desired. Sandwich the egg salad between the two slices of bread along with the lettuce, and serve.
